Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 2 tbsp vegetable oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 2 tbsp tomato paste
- 1 tbsp garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 cup chicken broth
- 1 cup canned crushed tomatoes
- 1/2 cup heavy cream
- Salt and pepper to taste
Step 1
Heat the oil in a large pan over medium-high heat. Add the diced onion and sauté until it turns translucent. Add the minced garlic and grated ginger and sauté for an additional minute.
Step 2
Add the chicken pieces to the pan and cook until they are no longer pink.
Step 3
Add the tomato paste, garam masala, ground cumin, ground coriander, turmeric, and cayenne pepper to the pan and stir until the chicken is coated with the spices.
Step 4
Pour in the chicken broth and canned crushed tomatoes, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for 20-25 minutes, or until the chicken is cooked through.
Step 5
Pour in the heavy cream and stir to combine. Season with salt and pepper to taste.
Step 6
Let the curry simmer for an additional 5 minutes to allow the flavours to meld together.
Step 7
Serve the chicken curry over rice, garnished with chopped cilantro if desired.
